Panko Crusted Chicken Fingers with Dill Mayo Dipping Sauce

This was a joy to make and the entire family loved it. I had most of the ingredients on hand. I had to run out for the panko and cheese though. My little 4-year old really enjoyed these chicken strips so I would definitely consider them to be kid-friendly. Put these yummy panko crusted chicken fingers to the test with your family. Panko Crusted Chicken Fingers with Dill Mayo Dipping Sauce

  • 2 1/2 teaspoons mustard powder
  • 2 teaspoons lemon juice (fresh squeezed)
  • 1 1/2 cup cup panko bread crumbs
  • 1 large egg
  • 1 cup vegetable oil
  • 1 1/4 cup finely grated sharp cheddar cheese (finely grated )
  • 1/3 cup mayonnaise
  • 1/2 teaspoon dry dill
  • 1 1/4lb pounds skinless, boneless chicken breasts (cut into 1/2 wide strips)


Step 1
For the sauce mix mayonnaise, 1/2 teaspoon dry dill, 2 teaspoons mustard powder, 2 teaspoons lemon juice and 1 tablespoon water. Add salt and pepper to taste. Chill.
Step 2
In a large bowl add in breadcrumbs, grated cheese, 1/2 teaspoon mustard powder, 1 teaspoon salt, 1/4 teaspoon pepper. Mix together well. Beat 1 large egg in a separate bowl.
Step 3
Heat 1 cup vegetable oil in a medium skillet over medium heat.
Step 4
Dip the chicken into the egg then into the breadcrumb mixture. Coat all the chicken. Carefully place stripes into your skillet and cool until golden brown, about 2-3 minutes per side, you might need to adjust your heat. Drain on a paper towel. Serve hot.
