Now that spring is knocking on our doors and the days are getting longer it seems there is even more to fill our days with. Longer days makes for more things to do and busy days tend to lead me to straight to the nearest drive-thru. Today I put together this easy chicken carbonara served with Minute® Ready Rice. This delicious meal took me less than 30 minutes to create, it was so easy, and stress free. The kids and I enjoyed this tasty, healthy lunch. It was an amazing step up from what we normally have for lunch, sandwiches.

Jasmine was happy because she got to help me cook lunch. As I type this she is watching cooking shows on TV, she’s addicted to cooking. Chicken Rice Carbonara Served with Minute® Ready Rice
- 1 lb boneless, skinless chicken breasts (cut into 1' x 1' pieces)
- 1/2lb bacon (diced)
- 1 cup frozen peas
- 1 jar Alfredo Sauce
- dash salt
- dash pepper
- 4 sprigs Fresh Basil (chopped for garnish )
- 1/2 cup parmesan cheese (grated)
- Minute® Ready Rice (your favorite flavor)
|On medium heat in a large skillet cook bacon. Add peas and cook an additional 2-3 minutes. Pour bacon and peas into a bowl and set to the side.|
|Add diced chicken to the same skillet and cook until chicken is almost cooked all the way through. Add in the cooked bacon and peas. Pour in the jar of alfredo sauce. Add salt and pepper to taste. Continue to simmer on low for about 5-7 minutes.|
|Heat Minute® Ready Rice one at a time. Pour rice onto plate, add Chicken Carbonara on top of rice. Add fresh basil, parmesan cheese.|
